Jollof Rice

Jollof rice is the most popular rice dish in Ghana and Nigeria. Its attractive colour and sumptuos taste makes it the preferred dish in occasions. It is enjoyed with vegetable salad or fried plantain

  • 4 c Rice
  • 1 Garlic clove, grated
  • 1/2 tbsp. Ginger, grated
  • 3 Seasoning cubes
  • 1 tsp. Dried Thyme
  • 1 tbsp. Curry powder
  • Chilli Pepper to taste
  • 1 Paprika
  • 2 Onion bulbs, nicely chopped
  • 1/2 c Tomato paste
  • 4 c Fresh tomatoes, blended
  • 1 kg Beef, Fish, Goatmeat, Chicken
  • 1 c Vegetable Oil


  1. Season the meat with the spices and boil till it is soft
  2. Fry or grill the meat
  3. Parboil the rice for about 8-10mins and the wash it
  4. Pour the vegetable oil into a pot
  5. Put half of the onions and fry till it looks translucent
  6. Pour in the blended tomatoes and paprika and then fry for about 15mins till it becomes a puree
  7. Pour the stock into the tomato puree and cook for another 10mins
  8. Pour the sauce into the rice till it just cover the surface of the rice in the pot
  9. Add the remaining onions into the pot with the rest of the spices
  10. Add salt and pepper to taste
  11. Allow to cook till it dries and still grainy (not mashy)
