Isi Ewu

This dish is so unusually delicious and is only complete if you have eaten the major parts of the goat head. It is seasoned with Utazi leaf and Ehuru seeds which gives it the distinct flavour and taste

  • 1 Goat head
  • 1 c Palm oil
  • 1/2 tsp. Potash, ground
  • Dried pepper to taste
  • 1/2 tsp. Ehuru seeds
  • 1 leaf of utazi (it is bitter)
  • Salt to taste


  1. Cut the goat head into pieces
  2. Season properly and cook till the meat is soft and you are left with a very little but rich stock
  3. Set it aside
  4. Pour the palm oil into a pot and place over heat
  5. Add the onions, potash, pepper and seasoning cube
  6. Stir fry for about a minute and then pour in the seasoned goat head with stock
  7. Add the ehuru seeds and the chopped utazi leaf
  8. Taste for salt and serve
