Nigerian Food and Recipes


Doughnuts are delicious and hard to resist especially when filled jam or custard. This recipe is enjoyed at any time of the day whether fried or baked .

  • 5 c Flour
  • 1 tsp. Salt
  • 1/3 c Shortening or butter
  • 1/4 tsp. Nutmeg
  • 4 tbsp. Instant Yeast
  • 1 1/2 c warm Milk
  • 1/4 c Warm Water
  • 2 Fresh Eggs
  • 1/2 c Sugar
  • Oil for deep frying


  1. Sieve flour, salt and nutmeg
  2. Add the sugar and yeast to the flour mixture
  3. Add the warm water and milk
  4. Melt the Vegetable Shortening and add to the mixture
  5. Rub in the beaten egg and mix all the ingredients in a bowl and leave for 10minutes
  6. Place on a smooth surface and knead for about 5minutes
  7. Leave to rise for about 1.5hours
  8. Knead on floured surface for 8 minutes and roll out.
  9. Cut out with a doughnut cutter and place in a tray for one hour
  10. Put the oil on fire and when in it hot, deep fry
  11. You may put jam or thick prepared custard in between before frying
